Chia Seed Pudding

Serve for breakfast, snack or pudding....

A delicious little treat, or a staple healthy breakfast, this vanilla flavoured chia pot can do it all.

Full of fibre, phytoestrogens, protein, omega 3, antioxidants and calcium, this heart, head, bone and skin healthy pot ticks plenty of boxes whatever age you are. Pair with berries for even more taste, fibre and antioxidants.

Takes only 5 minutes to prep and can be made in a batch to last up to 4 days, plus its vegan and gluten free!

If you've not used chia seeds before, you should know, they can absorb up to ten times their own weight in liquid. So, when you put the seeds in water, milk, etc., they expand and take on a gel-like quality, or, frogspawn like some might say!

Ingredients

Serves 2​

250ml Soya Milk​

4 tbsp chia seeds

2 tsp maple syrup

1 tsp vanilla extract

​

Optional toppings:

Berries

Chopped fruit

Chopped nuts

Seeds

Yogurt or cream​​

Instructions:
1. Mix all ingredients together in a bowl.


2. Cover and leave to stand for 10 minutes

​

3. Stir again to ensure no clumps of seeds anywhere. Cover and place in the fridge for at least one hour, or overnight.


4. Stir and serve with toppings of choice.
