Silken Chocolate Pudding
A decadent menopause friendly treat.....
Made with silken tofu (the softer, more liquidy creamy textured type, not the solid block) and dark chocolate, this decadent dessert is rich in protein, phytoestrogens, fibre, antioxidants, calcium, magnesium and yumminess, the perfect menopause treat.

It can help towards relaxation, sleep, low libido, lowering cholesterol, preventing muscle mass and bone density decline. However, it is worth noting it is very rich, so you only need a little portion.

The recipe below makes 6-8 portions.

Ingredients​
150g 70% dark chocolate
300g silken tofu
2-3 tbsp maple syrup to taste
2 tbsp Cocoa
1 tsp Vanilla extract
An optional pinch of salt

Optional extras to decorate:
Raspberries, or other fruit
Chocolate curls
Cocoa dusting
Fresh mint leaves (aids digestion)

Instructions:
1. Melt dark chocolate gently until it is a smooth liquid.
2. Add chocolate to silken tofu and blend either with a stick blender, or in a liquidiser, until smooth and fully combined.

3. Add other ingredients and blend again. Taste and adjust salt or maple syrup to taste.
4. Spoon into a serving bowl or ramekins, and chill for 4 hours, or overnight to set.
5. Decorate with chosen toppings and enjoy!​
