This tasty, moist loaf cake is a delicious sweet treat that won't cause a huge spike in blood sugar levels. Sharp rises in blood sugar levels can increase menopausal symptoms such as hot flushes, night sweats, mood swings and when those the blood sugar levels drop, fatigue and snacking can set in.

The fibre and yummy cinnamon in this cake will help to reduce the speed, the limited sugar, goes into your blood stream, as well as helping balance hormones.

Most importantly, this cake is a great source of phytoestrogens to help relieve or reduce occurrence and severity of those pesky menopausal symptoms, such as hot flushes.​

Serving with Greek yogurt will give you some bone strengthening calcium, to help fend off osteoporosis, and berries will provide anti-oxidants to reduce the risk of heart disease and many cancers.

Last but not least, this cake has heart and brain healthy omega 3, helping to reduce cholesterol and keep anxiety and depression at bay. Now that's real comfort food!
Ingredients​

130g oat, soya or chickpea/gram flour
- please note if using gram flour, this may taste and smell a bit awful until cooked and cooled
50g cold milled flaxseeds
75g soft brown sugar
1.5 tsp baking powder
2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
50g chopped walnuts
2 Carrots, peeled
2 red apples
2 eggs
100ml rapeseed oil

Instructions:
1. Grease and line a loaf tin. Preheat oven to 200/190/gas mark 6.
2. Mix dry ingredients in a bowl. Grate in carrots and apples, including skins of apples, and mix to combine.​

3. Lightly whisk the oil and eggs together in a smaller bowl. Add eggs and oil to dry mixture and mix until combined.
4. Spoon batter into prepared loaf pan and bake in the oven for 30-40 mins. The cake is done when a skewer comes out clean
5. Leave to cool in the pan, serve with yogurt and fruit. Will keep in an airtight container for several days.
