Mediterranean Chopped Salad
Simple and tasty....
This simple salad is known by many names in many Mediterranean countries, with slight variations in ingredients. Its is believed to have originated in Turkey as a simple shepherd's salad with its simple dressing to enhance natural flavour and keep everything fresh.
It is a great side to brighten up any plate, add to barbecues, omelettes, fish, kebabs, all sorts. Its lightens up a heavy plate.

Delicious with a simple houmous and flatbread or with falafels, flatbread and tahini.......

Ingredients​
1 cups diced tomatoes
1 cups diced cucumber
0.5 cup orange bell pepper
0.25 diced red onion
Handful finely chopped flat-leaf parsley
1 tbsp finely chopped mint
1 tbsp fresh lemon juice
0.5 tbsp olive oil
salt and pepper, to taste​

Instructions:
1. Mix ingredients together and serve. Can be stored in the fridge for up to 2 days.
